Recipe Artichoke Onion Pizza

In my quest for preparing healthier, more plant based meals for my family, I'm always trying out new dishes. Tonight I made an Artichoke Onion Pizza, quick and easy, and oh so delicious!

One recipe for homemade Pizza Dough - I love the pizza dough out of the Better Homes and Garden Cookbook, it's light and so easy to prepare. You can also use store bought Pizza Doughs, Flatbreads or whatever you prefer.

Olive Oil
1-2 onions, thinly sliced
1/2 jar of artichoke hearts
1/2 lb frozen spinach, squeezed dry
Feta or Mozzarella cheese
Italian seasoning to taste

  1. preheat oven to 425 degrees F (Or whatever your dough calls for), use a pizza stone or line a baking sheet with aluminum foil, drizzled with oil
  2. caramelize your onions - on low heat slowly caramelize your onions until they are golden brown
  3. roll out dough onto prepared baking sheet, drizzle with oil, add the seasoning and then all the rest of the ingredients
  4. bake for 18-20 minutes
